Beefless Stroganoff: What I've Learned So Far
If you find that you're missing traditional, meat-based dishes, this recipe for Beef[less] Stroganoff is for you! It's based on a traditional recipe and simply substitutes out real beef tips with a vegetarian alternative. Although I generally don't miss meat, there are times I crave some "comfort food" like meatloaf, potatoes and gravy, or beef stroganoff. I find this dish to be completely satisfying and I bet most meat eaters would too!
The recipes uses flour to thicken the sauce - which is what you do when you make gravy. If you're missing meat gravy and haven't found a good substitute, this recipe is a great start. You could remove the beef tips from the oil after cooking, and use that as your gravy base. I'll be looking for some good gravy recipes to share as we get closer to Thanksgiving!

Beefless Stroganoff Notes
• I always use the Gardein brand for beef tips. To be honest, I haven't seen another brand, but there might be one.• If you just can't find beef tips, you could use cubed seitan. • The brand of soup you use will make a big difference - Campbell's honestly is pretty good, but for this recipe I used an organic box from Whole Foods. • You could also add fresh sliced mushrooms to the sauce when you add the sour cream and mustard.
